Baked Bass and Fetta Cheese

Tave lavraku me djathe


3 pounds of Bass

4 tablespoons of butter

1 cup of crumbled feta

1/2 cup of chopped onion

1 cup of milk

1 teaspoon dry mustard

salt

Pepper


Brush the baking pan with butter and put half of the cheese, onion and butter in
it. Bring milk to a boil, and put it to a bowl together with half the cheese, 1
teaspoon mustard, salt and peeper; mix thoroughly in order to obtain a uniform mass,
and spoon this mixture over fish. Bake for 30 minutes at 350 degrees. Serve hot,
accompnanied with salad.

4 servings.

Marinated Fish

Peshk marinade


2 pounds of any fish (4-5 inches long)

4 tablespoons of lemon juice

Salt,

Pepper

3/4 cup of olive oil

6 garlic cloves

2 tablespoons flour

1/2 cup of red wine vinegar

1/2 teaspoons of sugar

1 1/2 cups tomato juice

Rosemary

Basil

1/4 cup olive oil


Wash, drain and sprinkle fish with 2 tablespoons of lemon juice. Season with salt
and pepper and let marinate 1 hour. Saute' fish lightly in hot oil and let cool
in a large deep fish. Saute' garlic in the remaining oil until yellowfish, add flour
and saute' until brownish. Stir in 1 cup of water, remaining lemon juice, vinegar,
sugar, and tomato sauce, and cook over low heat stirring continously until well
blended and slightly thickened. Adjust seasoning with salt, pepper, rosemary and
basil. Spoon this sauce over the fish , sprinkle with olive oil. Chill and serve
cold garnished with lemon slices.

4 serings.

Stuffed Artichokes with ground meat

Angjinare te mbushura


 

 

3 pounds articokes

1 cup finely grated onion

1 pound ground meat

2 garlic cloves, crushed

1/2 cup olive oil

1 pound tomatoes, peeled and chopped

3 bay leaves

salt

Pepper

Basil

Dill

1 teaspoon butter

2 tablespoon grated cheese


 

 

Cut of inedible tips of artichokes and boil for 5 minutes in salty
water. Saute onions, meat and garlic in olive oil. Add tomatoes and
saute. Add bay leaves, salt ,pepper ,dill and basil, and stuff this
mixture between artichoke leaves. sprinkle with butter and cheese, and
bake for 45 minutes at 350F. Serve hot.

4 servings.

Baked Pork Chops with Onion Sauce

6-8 pork chops

2 medium onions, chopped

1 cup celery, diced

2-3 cloves garlic, minced

1 1/2 cup stewing tomatoes

1/2 cup meat broth

3 tablespoon margarine or olive oil





Place
chops in a baking pan and cook in oven preheated 400 for about 30
minutes. Meanwhile, saute onions, celery and garlic in margarine or
olive oil; stir in tomatoes and broth and simmer slowly until sause is
thick and vegetables are cooked.remove pan with chops from oven.Turn
chops and cover with onion sauce. Return it to the oven reduce oven
temperture to 350. Bake approximately 45 minutes. If desired, add 1
package of frozen okra (thawed) 15 minutes before chops are removed
from oven.

Albanian Sausage

Koloface




1 lamb liver

1 pair lamb lungs

1 pound calf intestines

1 large onion

1/4 cup rice

1/4 cup water

7 tablespoons butter

2 tablespoons salt

1 teaspoon pepper






Wash and cut liver and lungs into small pieces small enough to fit in
the meat grinder. Grind these along with the onions. Mix this ground
mixture with the rest of the ingredients and three tablespoons of
butter. Set aside. Meanwhile, in a colander, thoroughly wash the
intestines both inside and out. Then , using a small spoon , stuff the
intestines with the filling. Do not pack tightly. tie off the bottom
and top with a string. Place the sausage, without cutting , in a baking
pan (pin wheel fashion); prick with fork . Dot with butter and bake at
400 for 1 hour, turning occasionally so that it will brown nicely on
all sides. Place Sausage on a platter and keep warm.

Olives and Beef Albanesi-Siciliano





Olives and Beef albanesi-Siciliano, is a dish which is vey popular in
the communties of the Albanian-Italians living in Sicily. This dish
dates back at least 200 years. passed down by my great-grandmother to
my grandmother and down to the present generation.This dish of olives
and beef is sometimes eaten with "Taccozzelli", small rectangles of
pasta and cheese. this cheese is always made from goats milk. The
people of Albanesi - Siciliani communities have a saying, "Every one of
our dishes represents Fact,and every spoonful an Episode". The Albanian
Italians of the towns of Cosenza and Piano Degli Albanesi have stood
behind this saying for over 500 years, and i am proud to have parents
who come from there.



11/2pounds round steak cut in 1"square cubes

1 one pound can of tomatoes

1 tablespoon minced parsley

1 large clove garlic (minced)

1-4 1/2 ounce jar of green pitted olives (sliced)

2 tablespoon olive oil

1/2 cup water

1/4 teaspoon of fine ground black pepper

salt to taste




Brown
salted beef cubes in oil in a 10 inch skillet; add water to loosen
browned bits of beef in pan. ombine tomatoes, parsley ,garlic and
pepper and simmer for 5 minutes. add to the meat and simmer for 1 hour
. Add to the olives and continue to simmer for 30 minutes or until the
beef is tender. Sauce should thicken.

Serve with cheese ravioli. Serves 4-6

Grounded Beef with Potatoes in Custard Sauce

Moussaka




- 1 1/2 pounds ground beef

  • 3 onions, chopped

  • 1/4 cup celery,chopped fine

  • 6 potatoes

  • 2 tablespoons butter

salt and pepper to taste

  • 4 tablespoons tomato paste

  • 1/2 cup water

  • 1 teaspoon oregano

oil or butter for frying

  • 3 eggs

  • 2 cups milk



-Saute onions and celery in butter lightly; add meat,oregano, salt
and pepper; stir and saute until meat is lightly browned. Stir in
tomato paste and water; simmer for 10 minutes. Peel and slice 5
potatoes; fry in oil. Set aside. In a 9x13 baking dish, alternate
layers of meat and sliced potatoes. Beat eggs and add milk; blend well.
Pour over casserole, reserving 1cup. Bake in a 350` oven for 15
minutes. Remove from oven; arrange round slices of potatoes on top;
pour remainder of beaten egg and milk over top. Return to oven to bake
another 25 to 30 minutes.

Lamb with Orzo Casserole

Mish Me Klitharaq




2 pounds of lamb, cubed (preferably leg)

2 cups orzo (or rice)

1/2 cup butter

3 tablespoons tomatoe paste

5 cups water

3 tablespoons minced onions

feta cheese

salt and pepper to taste




Brown meat in butter; add onions and saute. Stir in tomatoe paste
and continue to saute,adding 1 cup of water slowly . Simmer very slowly
for 45 minutes. Add orzo and 4 cups of water. Stir well several times
until mixture comes to a boil. Simmer an additional 20 minutes over
very low heat. Add salt and pepper, cover and let stand 15 minutes.
Sprinkle with feta cheese.

Baked Lamb with Mixed Vegatables

6 shouler lamb chops

2 medium eggplants (cut 1 inch cubes, unpeeled)

2 zucchini squash (sliced 1/4 inch slices )

1 summer squash (sliced in 1/4 inch slices)

1/2 pound green opr yellow wax beans, fresh

2 green peppers (sliced in 1/4 to 1/2 inch pieces)

1 small can tomato paste

2 tablespoon paprika

salt, pepper and garlic powder to taste




Brown chops on both sides under broiler. Salt and pepper to taste.
Arrange chops on bottom of roasting pan. Mix vegetables and remaining
seasonings ; place over lamb chops. Dot with tomato paste. Bake
uncovered in a 325 -350 oven for about 1 hour (until vegetables are
tender).

1 1/2 pound stewing lamb

1 small onion, chopped

1 tablespoon butter

1/2 cuprice, parboiled

1 egg

2 cups yogurt

1/2 clove garlic

1/2 tablespoon dried mint

salt to taste




Bake lamb in a 350 oven until tender. Saute onion in butter and add
to lamb. In a bowl, beat egg with a fork ; stir in rice ,yogurt,
garlic, mint and salt. Blend well and pour over lamb. Bake in a 350
oven until yogurt sets.

Stuffed Peppers with ground beef

Piperka Te Mbushura




1 pound ground beef

1 large pepper, chopped

3 medium onions, chopped

3 tablespooons butter

1 tablespoon mint flakes

2 tablespoon parsley flakes

1 1/2 cups stewed tomatoes or three large, fresh and peeled tomatoes

2 tablespoon tomatoe paste

1/4 teaspoon crushed red pepper

1/2 cup rice, uncooked and washed

dash of garlic powder

salt and peppers to taste

7-8 eight peppers

water




Saute
chopped pepper and onions in butteer until tender. Add meat and brown
lightly.Stir in remaining ingredients and simmer for a feww minutes.
Cut thin slice from stem end of peppers and remove seeds . Fill peppers
with meat mixtures. Line baking dish with hot water. Arrange peppers
and drizzle olive oil on top. Cover and bake for 50 minutes in a 350
oven.
