Baked Lamb and Rice and Yogurt
Tave Me Mish Me Oris e Me Kos
1 1/2 pound stewing lamb
1 small onion, chopped
1 tablespoon butter
1/2 cuprice, parboiled
1 egg
2 cups yogurt
1/2 clove garlic
1/2 tablespoon dried mint
salt to taste
Bake lamb in a 350 oven until tender. Saute onion in butter and add to lamb. In a bowl, beat egg with a fork ; stir in rice ,yogurt, garlic, mint and salt. Blend well and pour over lamb. Bake in a 350 oven until yogurt sets.

Stuffed Peppers with ground beef
Piperka Te Mbushura
1 pound ground beef
1 large pepper, chopped
3 medium onions, chopped
3 tablespooons butter
1 tablespoon mint flakes
2 tablespoon parsley flakes
1 1/2 cups stewed tomatoes or three large, fresh and peeled tomatoes
2 tablespoon tomatoe paste
1/4 teaspoon crushed red pepper
1/2 cup rice, uncooked and washed
dash of garlic powder
salt and peppers to taste
7-8 eight peppers
water
Saute chopped pepper and onions in butteer until tender. Add meat and brown lightly.Stir in remaining ingredients and simmer for a feww minutes. Cut thin slice from stem end of peppers and remove seeds . Fill peppers with meat mixtures. Line baking dish with hot water. Arrange peppers and drizzle olive oil on top. Cover and bake for 50 minutes in a 350 oven.

Stuffed Cabbage Leaves with Rice
and Sauerkraut

3 pounds cabbage
1/2 cup rice, raw
1 cup can sauerkraut
1 1/2 cups oil
1 teaspoon paprika
1 teaspoon oregano
Seperate cabbage and boil until soft;drain. Mix in a large bowl-rice sauerkraut, oil and seasonings. Fill cabbage leaves and arrange in a3 quart deep pot. Add enough water to cover leaves and 1/2 cup oil. Place plate on top and simmer 1 hour to 1 hour, 30 minutes.

Fried Eggplant in Batter
Patlixhan te Tiganisur
1 large eggplant
2 eggs (beaten)
2 cups breadcrumbs
1 cup olive oil
garlic salt
Heat 1 cup of oil in skillet. Dip eggplant in egg and coat with breadcrumbs. Place in hot skillet. Sprinkle with garlic salt. Turn when golden brown. Remove from skillet and place on paper towels so that the oil can be absorbed.

Stuffed Grape Leaves
Dolma
1 jar grape leaves
6 onions (chopped fine)
1 to 1/2 cups rice (small grain, rinsed)
3 tablespoons tomato paste
1 1/4 cups olive oil
1/4 cup fresh parsley
oregano, salt and pepper to taste
juice of a lemon
Saute onions in oil until lightly browned. Add tomato paste, seasoning and simmer until onions are soft. Add rice and simmer for 10 to 15 minutes, adding a little water to prevent sticking. Soak grape leaves in boiling water. Drain well. On each leaf, place 1 tablespoon of onion rice mixture. Roll and place grape leaves in a casserole; add enough boiling water to cover leaves; sprinkle with lemon juice and cover tightly. Bake in a moderate oven for 40 to 50 minutes.

Presh me Oris
1 bunch of leeks (chopped fine)
1/2 cup rice
1 teaspoon tomato paste
1/4 cup olive oil
2 cups water
1/2 teaspoon red pepper(sweet)
1/8 teaspoon hot pepper (optional)
1/8 teaspoon oregano
1 teaspoon salt
Clean leeks and chop fine. In a heavy pan, heat oil; add leeks ;stir over moderate heat about 5 minutes. Add salt, red pepper and tomato paste. Stir for 5 minutes more and add water, raising heat again until mixture comes to a boil. Add rice, stirring ingredents well. reduce heat ; cover and simmer until leeks and rice are tender, and liquid absorbed, about 30 minutes. Cool to room temperature and serve in a casserole.

6 to 8 large, firm tomatoes
1 large onion (chopped)
1 1/2 cups rice
1/2 cup olive oil
1 cup water
3 to 4 teaspoons tomato paste
1/2 teaspoon oregano
salt and pepper to taste
Saute onions lightly in oil. Add tomato paste, seasonings and water. stir well; add rice and simmer about 15 to 20 minutes. Cut tops of tomatoes and scoop out pulp. Pulp may be used in rice mixture or in baking dish, making a border around the tomatoes. Place tomatoes in a shallow baking dish and fill with rice mixture. Place tops on tomatoes. Add 1/2 cup water and bake in a 375 oven for 40 to 45 minutes. may be served warm or cold.

Spinach with Rice
Spinaq me oris
2 pounds spinach (washed and drained)
2 onions , chopped fine
1 cup rice(washed and drained)
1/2 cup olive oil
1/2 cup boiling water
1 tablespoon basil
1 teaspoon thyme
salt and pepper to taste
Saute onion in oil. Add spinach, rice and seasonings. Add water and bring to a boil. Cover, lower heat and simmer for about 25 minutes. Add more water if needed.

2 pounds fresh yellow or green beans
2 medium onions, chopped
1 teaspoon salt
1 teaspoon paprika
1 teaspoon crushed spearmint leaves
1 teaspoon parsley
2 tablespoons tomato paste
1/2 cup olive oil
2 cups water
Saute onions in oil until tender but not brown. Add Salt, tomato paste and stringbeans. Stir ; add mint and parsley. Add water and bring to a boil; reduce heat and simmer approximately 30 minutes.

Macaroni and Cottage Cheese

4 eggs
1pound cottage cheese
1/2 cup grated chedder cheese
1 cup milk
1 box elbow macaroni
6 cups boiling water
1/2 cup melted butter
1 teaspoon salt
Cook macaroni according to directions. drain and add butter. Ste aside. Mix well cottage cheese, eggs and milk. Pour half of the macaroni in a pan; sprinkle with chedder cheese and add half of the cottage cheese, egg and milk mixture. Add remaining macaroni and repeat with above method. Sprinkle top with grated chedder cheese. Bake in a 350 oven until golden brown.
