Albanian Sausage
Koloface
1 lamb liver
1 pair lamb lungs
1 pound calf intestines
1 large onion
1/4 cup rice
1/4 cup water
7 tablespoons butter
2 tablespoons salt
1 teaspoon pepper
Wash and cut liver and lungs into small pieces small enough to fit in the meat grinder. Grind these along with the onions. Mix this ground mixture with the rest of the ingredients and three tablespoons of butter. Set aside. Meanwhile, in a colander, thoroughly wash the intestines both inside and out. Then , using a small spoon , stuff the intestines with the filling. Do not pack tightly. tie off the bottom and top with a string. Place the sausage, without cutting , in a baking pan (pin wheel fashion); prick with fork . Dot with butter and bake at 400 for 1 hour, turning occasionally so that it will brown nicely on all sides. Place Sausage on a platter and keep warm.
