a) buy a fresh fish, like bass, gilthead or your favourite fish (not sole, though). it should be about 300 g per person.
b) tell whoever is selling it to you to clean it well and remove the inside. The scales can stay.
c) when you get home, get a pan that fits the whole fish and lay a 1 cm thick layer of coarse salt on the bottom.
d) rinse the fish real quick, then place it on the salt. cover the whole thing with coarse salt (it has to be covered all the way)
e) stick it in the oven (200°C) for 20-25 minutes.
You will then have to remove the salt and eat the fish, which won't be too salty because the scales and the skin won't let the salt go through.
